Preheat oven to 425 degrees. Whisk pumpkin, sweetened condensed milk, eggs, spices and salt in a bowl until smooth. Pour into crust. Bake for 15 minutes. Reduce oven temperature to 350 degrees and continue baking for 35 to 40 minutes. Cool the pie for a couple minutes. Garnish as desired. |

Recipe makes 1 9-inch pie
Preheat oven to 350 degrees. Spread the coconut on a baking sheet and bake it, stirring occasionally, until golden brown for about 5 minutes. In a saucepan, combine the half-and-half, eggs, sugar, flour and salt and mix well. Bring to a boil over low heat, stirring consistently. Remove the pan from the heat, and stir in 3/4 cup of the toasted coconut and the vanilla extract. Reserve the remaining coconut to top the pie. Pour the filling into the pie shell and cool until firm, about 4 hours. Top the pie with whipped topping and with the reserved coconut. |
